The Cabernet Sauvignon Grape

Cabernet Sauvignon is the Michael Jackson of the grape world.  It is grown in a vast array of climates and is world famous. 

It started out life sometime in the 17th century and is a product of a brief affair between Sauvignon Blanc and Cabernet Franc.  Popularity was gained from it’s prominence in Bordeaux wines, where it is often blended with Merlot and Cabernet Franc.

It’s thick skin means it is hardy against frost and rot which is why it has become so popular.   This also results in the high tannin levels which will calm with aging.  These wines can be laid down for 10 to 15 years where the flavours will develop from fruity, eucalyptus to cigar box and leather.

Cabernet has become a household name and one people can rely on if they are not familiar with others on the list.  Bulgaria’s entrance to the world wine market was largely driven by their successes with Cabernet Sauvignon.
