The Corvina Grape

Corvina is an Italian red grape varietal that is most commonly used in blends.  It is mainly grown in the Veneto region of Northeast Italy and is used along with many other grapes to create the regional wines Bardolino and Valpolicella.

It’s high level of acidity means that on it’s own it can be tart and slightly bitter resembling sour cherries.

Due to their thick skins these grapes often undergo a process called appassimento.  This is where the grapes are partially dried before they are fermented giving a richer  dried fruit/raisin flavour.
