Find your nearest fishmonger and buy 1kg of delicious fresh mussels – enough for 2 people

This Moules dish is simple, unbelievably delicious and the perfect accompaniment to both of these wines.

Recipe

  • INGREDIENTS
  • 1kg mussels
  • 1 medium onion
  • 1 thumb sized piece of fresh ginger
  • 3 cloves garlic
  • 1 red chilli – if you like heat go for 2 or none if you don’t like chilli!
  • 1tsp mustard seeds
  • 1 tsp turmeric
  • 2 tsp cumin
  • 2 tsp ground coriander
  • 1 tin coconut milk
  • Fresh coriander and lime wedges for garnish
  • Clean your mussels – remove any beardy bits and wash them through with cold water (get rid of the open ones)
  • In a big saucepan, on a medium heat, add a little oil and fry the onion for a few minutes.
  • Add the ginger, chilli, garlic (crushed) and spices and cook for 3 to 4 minutes.
  • Pour in the coconut milk and bring to the boil.
  • Turn down to a simmer for a couple of minutes then add the mussels and put the lid on the pan.  Give it a good shake and turn up the heat.
  • Cook with the lid on for around 3 minutes (shake now and again) until all the mussels are open and then remove from heat.  Divide between two bowls and sprinkle with fresh coriander.
  • Et voila!  Enjoy with a glass of Piquentum Malvazija or Bon Courage Gewürztraminer.
