- Dice the mango into 4mm cubes (better when the mango is not too ripe otherwise you get mush!) and the red onion smaller.
- Finely chop your chilli and coriander.
- Combine everything in a bowl and then season.
- Split evenly between the Croustades just before serving so that you don’t end up with a soggy bottom.
The Croustades are in the cracker isle at Waitrose. If you don’t manage them then you could roll sliced bread then cut with a cookie cutter and press into a mini muffin tray. Bake in the oven for about 5 minutes until it forms a crispy cup then remove and cool.
