Thai Mango Salad

Sweet, savoury, delicious and an excellent combination.

Romania’s answer to Gewürztraminer.  This lovely aromatic wine works brilliantly with aromatic food and this is a go to favourite canapé.

Thai Mango Salad

Recipe

  • INGREDIENTS
  • 1 packet of Croustades (a brilliant cheat from Waitrose)
  • 1 small mango – not too ripe
  • Fresh red chilli
  • A handful of corriander leaves
  • Juice of one lime
  • 1/2 tsp lemongrass purée
  • 1/2 a medium red onion
  • Dice the mango into 4mm cubes (better when the mango is not too ripe otherwise you get mush!) and the red onion smaller.
  • Finely chop your chilli and coriander.
  • Combine everything in a bowl and then season.
  • Split evenly between the Croustades just before serving so that you don’t end up with a soggy bottom.

The Croustades are in the cracker isle at Waitrose.  If you don’t manage them then you could roll sliced bread then cut with a cookie cutter and press into a mini muffin tray.  Bake in the oven for about 5 minutes until it forms a crispy cup then remove and cool.
